Our Utan is cooked Hawaiian style, without bitter melon or other ingrediments. Here is the list of all we put into it.
Ingrediments:
Belly pork with anykine pork, must have belly fat.
Long Egg plant
Long squash
Long beans (green beans)
Ginger root
1/2 Onion
1 can chicken broth
1 whole large tomatoe (or 2 smaller ones)
Directions: how fo cook
cut pork into edible bites, then begin cooking on medium high heat, into a pot while preparing the other items. (Make certain that pork is well cooked before adding vegetables)
cut egg plant into edible chunks
cut long squash into edible chunks
cut long beans
Cut off about a 2" chunk of ginger root and peel off old skin. Then cut into 1/8" wedges and add to the cooking pork
Dice up onion and add to the cooking pork
Dice up tomatoe and add to the cooking pork
Cut up long beans into 2" long
Add chicken broth & 1/2 can water
Let the long beans cook for about 10 minutes till edible then
Add all the remaining vegetables
Cook for another 10 minutes to allow all the flavors to blend.
Always serve with rice.
Serves about 6 adults

Side Street Pork Chops
Ingrediments:
2 tablespoons garlic salt
2 tablespoons pepper
1-1/3 cup flour
2/3 cup cornstarch
4 7-ounce fresh island pork chops, about 1-1/2 inches thick
1 cup cottonseed oil
Directions:
Combine garlic salt, pepper, flour and cornstarch.
Coat chops well in the mixture. Heat oil in a skillet.
Fry chops about 10 minutes, turning frequently until browned.
Cut meat from the bones and slice the chops into bite-sized pieces.
Serve over shredded cabbage with ketchup on the side.
Include bones for gnawing.
Serves 4.

Paniolo style Bar-B-Q hamburgers

Bacon - ʻIʻo puaʻa uahi or Pekona
Onions - ʻAkaʻakai
Chili - Kili
Mushrooms - Kūkaelio
Cheese - Waiūpaʻa
Bell pepper - Nīoi pūhaʻuhaʻu
Mashed potatoes - ʻUala kahiki palahē
Butter - Waiūpaka
Directions:
Separately you can cook up the onions, mushrooms, bell pepper, chili and whatever else ingrediments you want to use as a hamburger stuffer.
Take a full can of your favorite cold beer (it will be used as a mold later on)
Take 1/2 lb to 3/4 lb of hamburger and form into a ball
Take the full can of cold beer and smash in the center of the hamburger and then mold the hamburger around the can, but make sure you don't press the can of beer so hard into the hamburger. You need to leave about a 1/4" bottom to the hamburger
Take about 3 strips of bacon and wrap around the hamburger to lock it in place
Now very carefully, remove the cold can of beer and put it back into the cooler. You will use it later on.
Inside the mold put any cooked ingrediments that you have already pre-cooked.
Sprinkle cheese on top of the cooked ingrediments.
Put the hamburger mold onto a bar-b-q grill for about an hour.
Drink the beer mold and whatever else beer is available during that hour
Remove the hamburger mold and place on a plate and surround the mold with your mashed potatoes.
Put dabs of butter or any gravy you want on top of the mashed potatoes.
Pau. Dinner is ready to eat.
This meal serves 2-3 humans.

How to make Hard boiled eggs:
1. Bring water to boil
2. Take eggs from refrigerator (do not let sit outside and come to room temperature) and go straight to the boiling water.
3. Add 1/2 tsp baking soda (so that the shells will come right off)
4. Set timer for 15 minutes
5. After water returns to a boil, reduce heat to keep water from boiling over.
6. Put pan full of boiling water into the sink and add cold water.
7. Add ice into the cooled pan and let sit for another 15 minutes
8. Peel egg. By using baking soda, the shells fall right off and they will be perfectly cooked and ready for use.

chili rellenos
how to make chili rellenos
Ingrediments:
Poblano (the chili relleno pepper) each pepper is about 6"-8" in length
Monterey Jack Cheese
1 egg per pepper
flour
salt
potatoes
Sour cream
Directions:
1 cook over open flame the poblano long enough to wrinkle the outer skin then put the peppers into a bag to let the steam further cook the outer skin making it easier to remove.
2. Then after about 5 minutes in the bag, remove the outer skin, (scrape it off with a spoon or a fork without damaging the body of the pepper
3. Cut a slit into the pepper and remove the seeds and seed stem. Or as a second method, simply cut off the stem and leave the entire pepper open from the top like a sock.
4. Cut the cheese into easy to melt blocks about the size of a pack of gum
5. separate the egg whites from the yolk (one egg per pepper)
6. beat the egg whites to a fluffy thickness then add the yolk back to the mix along with a small amount of flour and continue mixing thoroughly.
6b. Or as a second method, you can coat the peppers with flour
7. stuff the pepper full of cheese
8. Alternate to cheese, if you don't like or can't eat cheese, then you can also use mashed potatoes mixed with a small amount of cortiga (sp)cheese then add a little salt to taste,
9. Dip the chile relleno in the egg batter. (some people like to smother the pepper in the egg batter)
10. Fill a frying pan about 1/4" deep with very hot oil (peanut oil is best). You can fry the first side only about 5 minutes then flip over till pau cook, long enough for the cheese inside to melt (about 20 seconds) then flip back over to the first side. Make sure all 4 sides get cooked evenly.
11. Then deep fry to a golden brown
12. serve with re-fried beans and spanish rise then cover lightly with sour cream
In another meal, try making the chile relleno using okinawan purple tomatoes, butter and coconut milk

Pork or Spam Guisantis
Ingrediments:
1 lb. Pork
(where ever you see the word pork, you can substitute for Spam) which when translated from Hawaiian it is Pork or Steak!
1/2 packet green peas
2 bay leaves
1/2 round onions - diced
1 small jar pimentos
1 small can tomato sauce
Directions:
Put pork in sauce pan 2 bay leaves and cook well but don't burn the pork
After cooking mostly, add tomato sauce.
Pre-cook the peas in micro wave for 5min
add the diced onions
add the pimentos last
Stir and serve over white rice

Deep Fried Zucchini
Get 2 kine - Here is #1
INGREDIMENTS
• 4 medium zucchini, about 2 pounds
• 3 eggs
• Salt
• Black pepper
• 1 cup all-purpose flour
• 3 cups bread fresh crumbs,
• Neutral oil, such as canola, for deep-frying
• ¼ cup chopped fresh parsley leaves for garnish
• 2 lemons, quartered, for serving (optional)
PREPARATION
1. Trim stem ends from zucchini and cut either crosswise into slices about 1/2-inch thick or into French-fry-like sticks. Heat the oven to 200. Beat eggs with salt and pepper in a shallow bowl or pie plate. Set up an assembly line of a plate of flour, the plate of eggs and a plate of bread crumbs. Have a baking sheet ready, and several rectangles of wax or parchment paper.
2. Coat a zucchini piece in the flour, dip in the egg and coat in the bread crumbs. You want a thin, even layer of each coating; shake off any excess. Put coated zucchini on baking sheet in a single layer, top with wax or parchment paper and repeat with remaining slices. Chill for at least 10 minutes or up to 3 hours.
3. Put a large heavy skillet or a deep broad saucepan over medium heat and pour in enough oil to come up the sides at least 1/2 inch. While the oil heats, line a plate with paper towels. The oil is ready when a pinch of flour sizzles immediately.
4. Put a few zucchini pieces in the oil without crowding. When the bottoms brown, after 2 to 3 minutes, turn and cook the other side for 2 to 3 minutes, adjusting heat to keep oil sputtering without smoking or burning zucchini. As each piece is done, put it on the paper towels to drain, turning to blot it on both sides if needed. Transfer to an ovenproof platter and keep warm in oven while you finish cooking. Add and heat up oil as necessary.
5. (Optional) Garnish with parsley and serve with lemon wedges.
6. I like to serve using Ranch Dressing dip instead of using #5 lemon wedges.

• Philadelphia cream cheese
• 3 eggs
• 1 cup all-purpose flour
• 3 cups bread fresh crumbs or panco
• Neutral oil, such as canola, for deep-frying
• either ranch dressing or a dressing of your choice for dipping
Directions
Cut zucchini in thin slices
lay criss-cross on a cutting board then add slice of cream cheese then fold over the remaining zucchini slices over the cheese, stick with a tooth pick then dip into the eggs, then dip into the flour, then dip into the bread crumbs or Panco, then into the deep fryer. Fry up for about 2 min until golden brown. Dip and eat.
At this point, you can substitute just about anything to make any flavor you choose. You still use the same basic formula, only add the bacon, shrimp or whatever stuffings you like. Here are a couple ideas.
